    Mark Singson, the visionary behind FAM Inc., draws inspiration from three core pillars: Food, Art, and Music. Growing up in Vancouver, Mark has immersed himself in these three realms, profoundly influencing the celebrated culinary creations for which he is known.

    Mark’s culinary journey began in Vancouver, where he honed his skills at esteemed establishments such as The Fairmont Pacific Rim, Oakwood, and Boneta. Seeking to broaden his horizons, he ventured to Melbourne, Australia, where he worked at renowned restaurants Vue De Monde and Saint Crispin. It was there that he hosted his first successful pop-up events, laying the groundwork for future endeavours.

    Upon returning to Vancouver, Mark played a pivotal role in the opening of AnnaLena, an acclaimed restaurant that now graces Canada’s 100 Best list. His culinary inspiration often stems from his Filipino roots, allowing him to create innovative dishes that offer fresh takes on traditional flavours. Mark aims to introduce the ingredients and tastes of his childhood to a broader audience, blending them with modern techniques to craft a refined dining experience.

    Over the past decade, Mark has dedicated himself to creating dining experiences that push the boundaries of flavour, style, and guest interaction.
