Patrick created, built and Operated 2 restaurants in Toronto – 2001-2018 Starfish Oyster Bed & Grill and The Ceili Cottage.

Author of The Oyster Companion, Patrick talks of Oysters the way Sommeliers talk about wine. His writings of Oysters paralleling the Wine World, has taken ShuckerPaddy around the Globe – teaching, Shucking, and Consulting on Oyster Bars Oyster Farms and special events.
